goosecut redux

well, i've gone and cut half my hair off again... i'm fairly pleased with it, but get the sense that this cut is a bit too basic/boring for me. i'll give it another week to sink in, and if i still feel that way i'll get it re-cut.

today was a pretty terrible day at work. i'm in the midst of a nasty head cold and didnt feel to good when i woke up, but decided to show up anyway. good thing i did, because everyone but me and one other person called in sick. so it was up to us to check in the patients, answer the phones, take care of the day's clerical work (that 5 people normally do)...to say the least it was stressful. but i got to show off my mad office skillz, and i think i gained some newfound respect from our clerical coordinator. i'm just keeping my fingers crossed that at least one more person comes back in tomorrow; i dont think i can have a day like that twice in a row.

i've been cooking a lot lately, trying out new recipes. mostly i've forgotten to take pictures of my finished products, but you guys are in luck this time.

i have a bunch of pages tagged in 'the enchanted broccoli forest', and the 'poached eggs on a bed of vegetables' looked easy enough. you basically sauté a bunch of veggies (in my case, about 3 c. spinach, 2 c. broccoli, a bag of pepper/onion mix, and a tomato) with garlic and herbs, add some bread crumbs to make it all stick together, and then you make little indentations in the mix and you crack the eggs right into them and poach them. the end result looks quite pretty:

the recipe states that this is a two-serving dish, and originally calls for only 4 eggs, but the first time i made it i liked the eggs so much that the second time around i added two more. i think it's more of a 3 person dish this way, and the portions are fairly generous.
